Dessert Masterclass – Jockey Club Catering

Warren O’Connor, Head Chef of Jockey Club Catering at Cheltenham Racecourse and Lawrie Jeffries Senior Sous Chef will present some of the basic recipes in a pastry chef’s tool kit with modern twists and tips on how the home cook can enhance desserts professionally.

These will be delivered in a unique and interactive way. ‘Woz and Loz’ will discuss how some these techniques and dishes are converted into the high volumes that the Jockey Club requires for its events and how the quality and consistency are maintained.

They will also give insights into how the team innovate food production and service throughout the country and what its like to be an event chef.
