Inspired by the trattorias and wood-fired pizzas of his childhood trips to Italy, Theo has developed a life-long passion for Italian food. His 17 years at The River Café instilled a respect for seasonal ingredients, carried forward to his eponymous restaurant at the InterContinental Hotel, Mayfair.
Inspiration is taken from Theo’s frequent trips to Italy; to the relaxed and friendly trattorias, where an appreciation of ingredients can transform a simple pasta course into something worth recreating at home.
His restaurant has attracted high praise with critic Jay Rayner declaring it ‘the best meal I have had all year’, and was awarded London Restaurant Awards Best Italian Restaurant of The Year, Harden’s Guide 2013 Best Italian/ Mediterranean over £50, the highest ranked Italian on The Sunday Times Food List 2013, and his ‘Cappelletti di Vitello’ won Tatler Restaurant Awards – Best Restaurant Dish 2014.
In 2016 he launched a casual dining concept, Theo’s Simple Italian in Kensington, and his first Asian venture, Theo Mio, opened at Intercontinental Bangkok in 2015.
Theo was formerly Head Chef and Partner at The River Café, which was awarded its first Michelin Star under his direction, with praise from major critics who described it as ‘a place of pilgrimage’ which has ‘changed Britain’s restaurant culture for good.’
